Pancakes! (Recipe Inside)

PancakesWhen I’m in the mood for fluffy pancakes, I use Alton Brown’s “instant” pancake mix recipe. The recipe enables you to make a bunch of “instant” pancake mix that can be stored up to 3 months if well sealed.

I often make the mix from scratch, however, for the exact amount of pancakes I plan to cook. Below, I’ve broken up the recipe and ingredients based on whether you’re cooking a small, medium or large batch (for a crowd). Directions for cooking remain the same.

Ingredients for Small Yummy Pancake Recipe (4-6 large pancakes)
1 C Flour
1/4 Tsp. Baking Soda
1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1 Tsp. Sugar
1 Egg, separated
1 C Milk
2 Tbsp. Butter, melted


1. Combine dry ingredients in a large bowl.

2. Whisk together egg white with milk and, in a separate bowl, egg yolk with melted butter.

3. Combine wet ingredients thoroughly, then add to dry ingredients and whisk together, until smooth. Be careful not to over-mix.

4. Heat an electric griddle or medium frying pan to 350 degrees Fahrenheit. Heat oven to 200 degrees Fahrenheit. medium skillet over medium-high heat. NOTE: You can check to see that the griddle or frying pan is hot by placing a few drops of water onto the griddle or frying pan. If the water dances across the surface, it’s hot!

5. Lightly butter the griddle. Wipe off thoroughly with a paper towel.

6. Gently ladle pancake batter onto the griddle. If you plan to make filled pancakes, sprinkle the filling (e.g., chocolate chips, fruit, bacon, etc.), onto the batter at this time. When bubbles begin to set around the edges of the pancakes and the griddle-side of the pancake is golden, gently flip the pancakes. Continue to cook 2-3 minutes or until the pancakes are set in the middle.

7. Serve immediately or remove to a towel-lined sheet and cover with a towel. Place in the oven to keep warm, up to 20 minutes, while you finish cooking the rest of the pancakes.

Ingredients for Medium Yummy Pancake Recipe (6-10 large pancakes)
2 C Flour
1/2 Tsp. Baking Soda
1 Tsp. Baking Powder
1 Tsp. Salt
2 Tsp. Sugar
2 Eggs, separated
2 C Milk
4 Tbsp. Butter, melted

Ingredients for Large Yummy Pancake Recipe (for a crowd)
6 C Flour
1 1/2 Tsp. Baking Soda
3 Tsp. Baking Powder
1 Tbsp. Salt
2 Tbsp. Sugar
6 Eggs, separated
6 C Milk
12 Tbsp. Butter, melted
