Green Beans Almondine

Breaded Salmon, Green Beans Almondine and Coconut Rice One of my favorite fast and simple side dishes is green beans almondine. My college roommate, Amanda Fenton, showed me how to make this and it’s been an awesome ‘brag dish’* for me ever since!

For this meal, I bought some French style green beans, but you can use any type.

1 C sliced almonds (raw)
1 1/2 Tbsp butter
1/2 lb green beans

1. Melt butter in a frying pan over medium-high heat.

2. Add almonds and stir to coat in butter. Toast the almonds by stirring frequently until they become golden brown.

3. Remove toasted onions and add in the green beans. Stir to coat in remaining butter and add 1/2 C water. Cover and steam for 4-5 minutes, until green beans are cooked, but still slightly crisp. Salt and pepper to taste.

4. Transfer green beans to serving dish and top with toasted sliced almonds.

5. Enjoy!

How easy is that?! My friend, Amanda, has an even simpler method for the dish. She bought her green beans in a sealed plastic bag, cut the corner, and steamed the green beans in the microwave (in the bag). Then, she just had to toast the almonds, toss the green beans with some salt and pepper and plate up the dish.

*’brag dish’ = a dish that is embarrassingly simple to make but super classy and impressive!
